Banana Coconut Cupcakes

                                     

And there it was again, that freaky black looking banana in our kitchen.



What to do with just one banana? Throw it out - or use it for some cupcake action?

I decided on not wasting food and bake some Banana Coconut Cupcakes.

Ingredients for about 8 cupcakes

1 egg
3 tblsp of dark brown sugar
4 tbsp milk
4 tbsp milk
1 very ripe banana, mashed
4 tblsp of oil
1 tsp vanilla extract
1 C wholewheat flour
1 and 1/2 tsp baking powder
1 and 1/2 tsp baking powder
a pinch of salt
3/4 tsp ground nutmeg
1/2 C coconut and a little extra for topping
3/4 tsp ground nutmeg
1/2 C coconut and a little extra for topping

Directions

Pre heat the oven to 400F
In a bowl, whisk together the egg, sugar, milk, banana, oil and vanilla extract
In another bowl, mix together the flour, coconut (1/2C), salt baking powder and nutmeg



Mix the flour mixture into the other bowl and fold in
Fill cupcake liners 3/4 full
Sprinkle rest of coconut over the tops
Bake for about 15minutes
Let cool down
 

And just because Frosting is so yummy, we put some of it on top of those cupcakes and sprinkle them with some more coconut flakes.
